Seared Scallops in White Wine Sauce

Saint-Jacques scallops sear for 90 seconds per side in a very hot pan, after being thoroughly dried with paper towels. The sauce is made separately: 150 ml of dry white wine reduced with shallots, mounted off the heat with 80 g of cold butter. The scallops return to the sauce for just 30 seconds.

Instructions

  1. Thaw

    Keep the scallops in the fridge for 4 to 6 hours, in a sieve set over a bowl so the liquid drains away. They are IQF, so take out only the 12 you need and leave the rest frozen. The 1 kg bag holds 800 g net drained and about 26 scallops at 10/20 caliber, which makes two dinners for four. No warm water, no microwave: the edges cook before the center thaws.

  2. Drying, the step that decides the recipe

    Lay the scallops on a double layer of paper towels, pat the tops and leave them uncovered in the fridge for 20 minutes. Frozen scallops are packed in brine, and any water left on the surface turns to steam and boils them instead of searing. They should feel matte to the touch, not glossy.

  3. The wine reduction ⏱ 7 min

    Put the shallots, wine and vinegar in a small saucepan and simmer over medium heat until 2 to 3 tablespoons of syrupy liquid remain, about 6 minutes. Add the cream and give it one more minute. Cream is not traditional, but it keeps the sauce together if you run it slightly too hot.

  4. A very hot pan

    Heat the oil in a heavy pan until the air above it shimmers. The scallops go in with pepper, no salt: they are already salted from the brine, and salt draws out more water exactly when you need a dry surface.

  5. Sear, 90 plus 90 seconds ⏱ 3 min

    Place the scallops with space between them, in two batches if needed, and do not touch them for 90 seconds. Flip once and give them another 90 seconds. Move them to a warm plate. Three minutes total, no more: past 4 minutes the muscle tightens and turns rubbery.

  6. Mounting the sauce

    Take the saucepan off the heat, wait 30 seconds and whisk in the cold butter cube by cube until the sauce turns silky and opaque. If it boils now, it splits and you are left with clear butter. Strain it for a fine sauce, or leave the shallots in.

  7. Serving

    Pour the sauce onto the plate and set the scallops on top, seared side up, so the crust stays crisp. Lemon juice, chives, and salt only now, to taste. Serve with potato or celeriac purée, plain rice, or simply good bread for the sauce.

That is where every failure comes from: a pan that is not hot enough, scallops crowded together and a wet surface, so instead of a golden crust you get pale scallops boiled in their own liquid. The 10/20 caliber matters too: a large scallop has time to build a crust before the center cooks through, a small one is fully done in 60 seconds.
