Baked salmon with vegetables

Baked salmon needs exactly 12 minutes at 200°C, not the 25 it usually gets. The vegetables go in first, 15 minutes ahead, so everything finishes together. One tray, 35 minutes including portioning.

Instructions

  1. The day before

    Defrost the fillet 24 hours in the fridge. Portion it into 4 while still semi-frozen, it cuts much cleaner.

  2. Vegetables go first ⏱ 15 min

    Oven at 200°C. Vegetables with 3 tbsp oil, salt, pepper and paprika, in a single layer. 15 minutes alone.

  3. Salmon over the vegetables ⏱ 12 min

    Pull the tray out, nestle the salmon portions skin down among the vegetables. Oil, salt, crushed garlic and lemon slices on top. Back in for 12 minutes.

  4. The rest

    Tray comes out, salmon rests 3 minutes. The flesh should flake under light pressure.

Good to know

Salmon is done at 52-55°C in the middle, when the flesh flakes but is still juicy. At 25 minutes in the oven it is already dry. That is why the vegetables go in first: root vegetables need 25-30 total minutes, the salmon only 12.

Can I bake salmon straight from frozen?

You can, but it cooks unevenly: the edges dry out before the middle is done. The right way is 24 hours in the fridge, then portioned semi-frozen.

Which vegetables work on the tray?

Baby potatoes, peppers, zucchini, red onion, broccoli. Root vegetables go in 15 minutes before the salmon.

What internal temperature?

52-55°C at the thickest point for medium, juicy salmon. Past 60°C it turns dry and stringy.
