Black capelin roe · for sushi · MSC certified

Gunkan sushi with roe at home
Gunkan means warship in Japanese: an oval of rice, a band of nori and a cargo of roe on top. At restaurants it is among the priciest pieces, at home it is the sushi that needs no knife skills and no rolling mat.
Notes
Any roe works: orange, red or black masago, or golden tobikko, which is larger and crunchier. A four-colour platter looks straight out of an omakase. Thawed roe keeps a few days in the fridge.
Black elegance
Authenticity
Why it's worth it
Capelin roe from the North-East Atlantic, MSC-certified wild-caught in the cold waters of Iceland. The same crisp, fine-pop texture, but in the black shade that mimics caviar. The dramatic black color adds contrast and elegance to any platter.
Culinary inspiration
How to enjoy
Take them out of the freezer a few hours beforehand and keep them in the fridge, in their original container. For gunkan, gently place them with a wet spoon over the seaweed, so you don't crush the grains. They also go great on soft-boiled eggs or sliced avocado.
Food pairings
Serve them like this
◆ Sushi gunkan with rice and nori seaweed
◆ Blini with sour cream
◆ Toast with butter and soft-boiled egg
◆ Sliced avocado with lime
◆ Brut Champagne or chilled Prosecco
