Prepare the toppings
Drain the chickpeas very well and set out separately the yogurt, chutneys, onion, tomato, coriander and sev. Everything needs to be ready before frying.

Fry the samosa ⏱ 3 min 30 sec
Put the Vegetarian Samosa straight from the freezer into oil at 160°C, in small batches, until golden and piping hot.

Drain without steam
Transfer the samosa to a rack and let the excess oil drain off. Don't cover or stack them while they're hot.

Build the chaat
Arrange the samosa on a platter and lightly crush a few of them. Layer on the chickpeas, yogurt, chutneys, onion and tomato, without drowning the crust.

Finish and serve
Scatter over chaat masala, coriander and sev. Serve immediately, while there's a contrast between the crisp shell and the cold toppings.
