N° 126 · ASIAN PANTRY
Panko
Japanese breadcrumbs · large and airy flakes
Japanese panko breadcrumbs, large and airy flakes of crustless bread.
Because they trap more air when fried, they come out much crispier and lighter than ordinary breadcrumbs and brown evenly to a golden color without burning. Coat meat or fish with them and you'll have the same crust found in Japanese restaurants, which remains crispy even after cooling.

Why it's worth it
Panko is the Japanese breadcrumb with large, airy flakes that fries up much crispier and fluffier than ordinary European breadcrumbs. The flakes absorb less oil and create that light, crackling crust with every bite, forming the basis of Japanese breaded dishes, from katsu to ebi fry. 1 kg pack, vegan, enough for many crispy meals.

How to enjoy
For a crispier crust, double the panko layer (double breading) and press gently to adhere. Keep the oil consistently at 170-175°C, otherwise, it will absorb fat. And if you don't want to fry, brown the panko for a few seconds in a pan with a little butter and sprinkle it over pasta, salads, or cream soups for a crispy topping.
