Grilled squid with garlic and parsley
Squid has one rule: either very hot and fast, or braised for an hour, nothing in between. The grill version is the fast one, and the Patagonian tubes, already cleaned, make it a 20-minute dish that tastes like a seafront restaurant.
Notes
The diamond scoring is not just for show: it cooks the squid evenly, curls it and holds the sauce in the grooves. If you use a pan, open a window, high heat makes serious smoke.

Why it's worth it
Wild Patagonian squid from the Southwest Atlantic, small cleaned tubes, size 9-12 cm. More delicate and tender than large squid, it's perfect for quick cooking whole or in rings. Cleaned and ready to cook, no cartilage or membranes.

How to enjoy
The golden rule for calamari remains either two minutes over maximum heat, or forty minutes braised in a sauce – never in between. For crispy rings, cut one-centimeter rings, coat in semolina flour, and deep-fry in oil at 180°C for seventy seconds. For calamari ripieni, stuff them with rice, herbs, and tomatoes, then bake for forty minutes at 160°C.
Food pairings
Serve them like this
◆ Fried calamari with lemon and aioli
◆ Seafood risotto with olive oil
◆ Mediterranean salad with chickpeas, tomatoes and parsley
◆ Tagliatelle with cherry tomato sauce and capers
◆ Dry white wine (Verdejo or Albariño)
