Argentine shrimp a la plancha
The Argentine shrimp is already red when raw. Doneness shows in the flesh turning opaque, not just in the color of the shell.
Notes
Don't marinate in lemon before cooking, since the acid changes the texture. The heads have an intense flavor and can release juices onto the plate. The product contains crustaceans and sulphites.
Wild red
Authenticity
Why it's worth it
Wild-caught Argentine red shrimp from the cold waters of the Southwest Atlantic. Unlike farmed shrimp, they are red even when raw and have a sweet, almost lobster-like meat due to the deep sea where they live. Whole, with head and shell, they retain all their flavor when cooked.

How to enjoy
Slowly thaw the Argentine Shrimp in the refrigerator, then pat them dry and cook them whole on a very hot griddle for about two minutes per side. Stop when the meat is opaque and reaches a minimum of 63°C; add garlic, parsley, and lemon only at the end.
