Shrimp summer rolls
Summer rolls are the fresh sibling of spring rolls: nothing fried, everything raw and fragrant, wrapped in a translucent rice sheet. The only obstacle is the sheet, and it vanishes once you learn it needs 5 seconds in water, not 30.
Notes
The classic mistake is soaking the sheet too long: it turns sticky and tears. Take it out while still slightly firm in the centre. The rolls keep 2 hours under a damp towel, not overnight.

Why it's worth it
Rice paper sheets are the translucent base of Vietnamese spring rolls, the fine sheets that you soak and fill as you wish. They soften in seconds in warm water and become elastic and sticky, ready to wrap fresh vegetables and herbs. 300 g pack, vegan and gluten-free, no cooking required.

How to enjoy
For cold summer rolls, load with cooked rice vermicelli, shrimp, mint, Thai basil, and lettuce. Roll tightly like a burrito, with the edges folded inwards. For fried chả giò, fill with ground meat and mushrooms, then deep-fry in 170°C oil until golden and crispy. Serve with nuoc cham or peanut sauce.
Food pairings
Serve them like this
◆ Nuoc cham sauce with lime, garlic, and chili
◆ Peanut sauce with coconut milk and hoisin
◆ Rice vermicelli (bún) with fresh herbs
◆ Quick pickled carrot and daikon salad
◆ Cold Asian beer (Saigon or Tiger)
