Warm hotteok with ice cream
The dessert works through contrast: hot, crispy Hotteok, a molten center, then a small amount of cold ice cream.
Notes
Don't put the ice cream on top of the whole pancake, since it softens the crust right away. Serve it alongside and cut the Hotteok only after the short rest.
Warm and sweet
Authenticity
Why it's worth it
Hotteok are the sweet pancakes you'll find piping hot in Korean street markets, with a core of sugar and cinnamon that melts when heated. The fried crust remains crispy on the outside and soft on the inside, and the filling flows warm with the first bite. They come six to a pack, and you fry them directly from the freezer in a pan with a splash of oil, ready in minutes.

How to enjoy
Cook the Hotteok directly from the freezer in a pan with very little oil over low heat. Flip after about three minutes, press lightly, and serve immediately; the sugar filling is very hot.
Food pairings
Serve them like this
