Crunchy roll with Ebi Tempura
The crunchy roll is the inside-out roll that disappears first from the platter: rice on the outside, tempura shrimp in the middle and a layer of toasted panko that crackles with every bite.
Notes
No bamboo mat? A kitchen towel covered in cling film works too. Do not use too much rice, the roll breaks when sliced. Assemble while the shrimp are still hot and serve right away, the panko crust stays crisp only for the first hour. How to enjoy
For authentic sushi rice, after cooking, transfer the warm rice to a wooden bowl (hangiri) and fan it while gently incorporating the sushi vinegar (rice vinegar, sugar, salt). Use cutting motions, DO NOT stir in circles like for pilaf. The grains should remain whole, shiny, and stick together slightly. Serve lukewarm, never cold from the refrigerator.
