Instructions

  1. Make the spicy mayo

    Mix the Kewpie Mayo with the Sriracha, finely grated lime zest and a little juice. Keep the sauce cold until serving.

  2. Heat the oil

    Bring the oil to 180°C and set up a rack for draining. The nests go into the oil straight from the freezer.

  3. Fry in batches ⏱ 3 min 30 sec

    Fry the nests without crowding the basket, until the potato strips are golden and the center is piping hot.

  4. Drain properly

    Lift the nests onto a rack. Let the oil return to 180°C before the next batch and don't cover the pieces already fried.

  5. Serve

    Arrange the nests on a platter, scatter over spring onions and sesame and serve right away with spicy mayo and lime slices.
