Oven-baked grouper with potatoes and garlic

Start the potatoes ⏱ 25 min
Preheat the oven to 200°C. Toss the potato wedges with olive oil, salt and pepper, spread them in a large baking tray and roast for 25 minutes, until they start to brown.

Make the garlic butter ⏱ 1 min
Melt the butter in a small pan over low heat, add the sliced garlic and let it soften for 1 minute without browning. Take off the heat and stir in the lemon zest and juice.

Add the fish
Pat the grouper fillets dry with paper towels and season with salt and pepper. Lay them over the potatoes skin side down, brush generously with the garlic butter and scatter the thyme on top.

Bake and rest ⏱ 14 min
Return the tray to the oven for 12 to 15 minutes, until the flesh turns opaque and flakes into large petals when pressed. Let everything rest for 3 minutes before serving.

Bring the tray straight to the table with lemon wedges on the side. The tray juices, with butter, garlic and lemon, are all the sauce you need.
