Vegan salmon poke bowl
Poke is a Hawaiian rice bowl with fresh toppings. Our version is 100% vegan: the plant-based salmon cuts and looks like the real thing, and the contrast with edamame and wakame makes a colourful, satisfying lunch.

Thaw the vegan salmon
Move the Vegan Salmon Sashimi from the freezer to the fridge 2 to 3 hours ahead. It is served cold, with no cooking at all, so thawing is the only planning needed.

Cook the rice ⏱ 30 min
Rinse the rice in 4 to 5 changes of water, until it runs almost clear. Cook with 240 ml of water for 12 minutes over low heat, then rest for 10 minutes under the lid, without lifting it.

Season the rice ⏱ 3 min
Fold the rice vinegar into the warm rice and let it come to room temperature. Meanwhile, blanch the edamame for 3 minutes in salted water and drain.

Cut and prep
Cut the vegan salmon into 2 cm cubes. Slice the cucumber and avocado. Cut the avocado right before assembling so it does not oxidise.

Build the bowl
Put the rice at the base of the bowls, then arrange in sections: vegan salmon cubes, edamame, goma wakame, cucumber and avocado. Drizzle with soy sauce and sprinkle the sesame seeds.
Good to know
Season the rice while warm, but build the bowl once it reaches room temperature, otherwise the vegan salmon warms up. For a spicy kick, mix a spoon of mayonnaise with sriracha and drizzle on top.
