Vegan tuna salad on toast
Tuna salad is a staple of Romanian home cooking: quick, creamy, with corn and pickles. Here it is rebuilt 1:1 with 100% vegan tuna, which flakes exactly like the canned kind, plus Japanese Kewpie mayonnaise.

Thaw the PlanTuna
Move the PlanTuna from the freezer to the fridge 2 to 3 hours ahead. It is ready to eat once thawed, no cooking needed.

Flake it like tuna
Flake the PlanTuna with a fork in a bowl, into irregular pieces, exactly as you would with canned tuna.

Mix the salad
Add the Kewpie mayonnaise, corn, red onion, pickled cucumbers and lemon juice. Mix, season with pepper and taste: the pickles bring the salt, so add more only if needed.

Toast and serve
Toast the bread slices until golden and crisp. Spread the salad generously, sprinkle with dill and a little more pepper. Keeps in the fridge for one day at most.
Good to know
Kewpie is sweeter and more umami than regular mayonnaise, so nothing else is needed. The same salad works in a sandwich, in a wrap, or over crisp lettuce for the light version.
