Shrimp pasta with garlic and tomatoes
Shrimp pasta is the dish you always order out and it works just as well at home, on one condition: good shrimp. Black Tiger 16/20 are large, sweet and stay juicy if cooked briefly.

Prep the shrimp ⏱ 10 min
Thaw the shrimp for 10 minutes under cold running water. Peel them, keep the tails on for looks, and pat them dry with paper towels.

Cook the pasta ⏱ 10 min
Bring a large pot of salted water to the boil and cook the spaghetti one minute less than the pack says. Save a cup of the cooking water before draining.

Sauté garlic and shrimp ⏱ 4 min
Heat the oil in a large pan over medium heat. Add the garlic for 30 seconds, just until fragrant, then the shrimp: 1 to 2 minutes per side, until pink. Lift them onto a plate.

Make the sauce ⏱ 5 min
In the same pan add the cherry tomatoes and white wine. Simmer 4 to 5 minutes, until the tomatoes soften and the sauce reduces. Season with salt and pepper.

Bring it together ⏱ 2 min
Add the spaghetti with a ladle of pasta water and toss until the sauce turns glossy. Return the shrimp just to warm through, scatter parsley and chilli flakes and serve right away.
Good to know
The shrimp cook in 3 minutes total, any longer means rubber. That is why they go in first, come out, and return only at the end. The pasta water binds the sauce, do not skip it.
