Heat the fryer
Heat the fryer with oil to 175°C. Prepare a rack for draining. Don't use paper, because the steam softens the base.

Fry the takoyaki ⏱ 6 min 30 sec
Place the Takoyaki straight from frozen and fry at 170-175°C. Turn them halfway through, then check that they are crispy on the outside and piping hot in the center.

Drain briefly
Lift the balls onto a rack and let the excess oil drain. Plate immediately, while the surface is crispy.

Finish Osaka-style
Arrange on a platter, drizzle takoyaki sauce and Kewpie Mayo in a zigzag, then scatter aonori, katsuobushi and spring onions. Serve immediately.

The center stays very hot, so let each portion rest 1-2 minutes before the first bite. Don't cover the platter or add the sauce before frying.
