Warm hotteok with ice cream
The dessert works through contrast: hot, crispy Hotteok, a molten center, then a small amount of cold ice cream.

Prepare the pan
Lightly oil a non-stick pan and heat it over low heat. The Hotteok goes into the pan straight from frozen.

Sear the first side ⏱ 2 min 45 sec
Set the Hotteok in the pan and cook over low heat until the base turns golden. Don't raise the heat. The center needs to warm through without burning the outside.

Flip and press ⏱ 2 min 45 sec
Flip the pancakes, press them very lightly with the spatula and continue over low heat until golden on both sides and hot in the center.

Let the steam escape ⏱ 1 min
Move the Hotteok onto plates and wait a minute before cutting. The sugar and cinnamon filling can be very hot.

Add the cold contrast
Place a small scoop of ice cream next to each Hotteok, scatter over the Sesame Mix and add just a thin drizzle of honey, if you like. Serve right away.
Good to know
Don't put the ice cream on top of the whole pancake, since it softens the crust right away. Serve it alongside and cut the Hotteok only after the short rest.
