Jian dui with adzuki

Jian dui is the dim sum dessert built on contrast: crispy sesame, chewy rice dough and sweet red bean paste.

Instructions

  1. Heat the oil

    Bring the oil to 170°C in a deep pot. Don't go over: the sesame can burn before the center heats through.

  2. Fry from frozen ⏱ 5 min 30 sec

    Put the balls straight from the freezer, in small batches. Move them gently with a slotted spoon so they brown evenly.

  3. Drain on a rack

    Remove the balls when they are golden and slightly puffed. Let the oil drain on a rack, without covering them.

  4. Let the center come to temperature ⏱ 2 min

    Wait before the first bite. The adzuki paste in the center stays much hotter than the outside.

  5. Serve

    Optionally add a very thin drizzle of honey and a pinch of salt. Serve one piece at a time, alongside hot tea.
