Mix the dip
Combine the Sriracha with the honey, rice vinegar and lime juice. Taste and adjust: the sauce should be sweet and spicy and acidic enough for the seafood filling.

Heat the oil
Bring the oil to 180°C in a deep pot. Set up a rack for draining, not paper towels: paper traps steam under the batter and softens the base.

Put the Money Bags straight from the freezer, in small batches, without crowding the pot. Turn them once and remove them when the dough is evenly golden and crispy.

Drain and check
Move the pouches to a rack. Let the oil come back to 180°C before the next batch and remove the vegetable tie before eating.

Arrange them on a platter with the chili-lime dip. Scatter over peanuts, if you like, and serve while the shell is still delicate and crisp.
