Instructions

  1. Prepare the basket

    Bring the water to a boil. Line the bamboo basket with perforated paper or dried cabbage leaves, without blocking the steam flow.

  2. Arrange the har kao

    Put the Har Kao straight from the freezer in a single layer, with space between the pieces. Don't let them touch the water.

  3. Steam ⏱ 4 min 30 sec

    Set the basket over the boiling water and close the lid. Don't lift the lid or move the dumplings while they cook.

  4. Make the dip

    Mix the Soy Sauce with the rice vinegar, ginger, spring onions, sesame oil and Sriracha Sauce. Taste and keep the dip balanced, not too spicy.

  5. Serve immediately

    Lift the har kao carefully, using a thin spatula. Serve them straight from the basket, while the wrapper is translucent and springy.
