Crunchy roll with Ebi Tempura
The crunchy roll is the inside-out roll that disappears first from the platter: rice on the outside, tempura shrimp in the middle and a layer of toasted panko that crackles with every bite.
Instructions

Wash and soak the rice ⏱ 30 min
Wash the rice in 4-5 changes of water, until it runs almost clear. Cover it with cold water, let it soak, then drain completely.

Cook and rest the rice ⏱ 12 min
Put the rice with 360 ml of water in a pot with a lid. Bring to a boil, reduce the heat to minimum and cook without lifting the lid, then turn off the heat and leave it covered for another 10 minutes.

Season the rice
Dissolve the sugar and salt in the rice vinegar. Fold the mixture into the rice with cutting motions and let it cool until just warm, not cold.

Toast the panko
Heat the oil in a pan over medium heat, add the panko and stir constantly until evenly golden. Tip it onto a plate right away, as it keeps darkening even off the heat.

Fry the Ebi Tempura ⏱ 3 min 30 sec
Fry the Ebi Tempura straight from the freezer at 180°C, until the batter is golden and crisp. Drain the shrimp on a rack and trim the tail tips.

Roll inside out
Wrap the bamboo mat in cling film. Place half a nori sheet shiny side down, spread a thin layer of rice over the whole surface, then flip the sheet rice side down. Lay the tempura and cucumber across the middle and roll firmly, pressing evenly.

Coat in crunch
Mix the Kewpie Mayonnaise with the Sriracha Sauce for spicy mayo. Roll each roll through the toasted panko, pressing very lightly with your palm so it sticks to all the rice.

Slice and serve
With a wet blade, cut each roll into 8 equal pieces, wiping the knife between cuts. Drizzle the spicy mayo in a zigzag on top and serve with Soy Sauce, Gari Ginger and Wasabi paste.
Good to know
No bamboo mat? A kitchen towel covered in cling film works too. Do not use too much rice, the roll breaks when sliced. Assemble while the shrimp are still hot and serve right away, the panko crust stays crisp only for the first hour.
